I have a lovely daughter. She’s smart and beautiful, but unlike her mother, she doesn’t do a lot of cooking. Don’t misunderstand, she can cook, she just doesn’t have time for it.
Recently she asked me for recipes with a few healthy ingredients that would be quick for her to make after work (see my cooking challenge of the month). This chicken salad recipe is for you, Lauren!
Nutty wild rice, almonds and bottled dressing are all staples you can buy and keep in your pantry. Trader Joe’s (and I’m sure other stores) even have precooked rice you can keep on hand too.
If you don’t have time to cook chicken breasts, buy a roasted chicken. They are often on sale, and for the price, you’ll have several meals for the week.

Ingredients
- 1 large chicken breast, cooked and chopped into bite sized pieces
- 1 cup wild rice, cooked
- 2 tablespoons almonds, sliced and toasted
- 1 cup baby spinach
- ¼ cup light feta cheese
- 2 tablespoons light raspberry vinaigrette
Instructions
- Combine ingredients and serve.
