Pat's Christmas Bark

This is one of those recipes where I reserve the right to stray from my healthy and light cooking theme. Pat’s Christmas Bark is just too easy and delicious not to share with you.

I can’t say where Pat found the original recipe, but I’m sure glad she did! The bark turns out like an Almond Roca, and it’s absolutely addicting! Four simple ingredients, and one of them is a cheap box of saltines!

I don’t know how many the recipe serves, and Pat didn’t say. You break it up into pieces, so it’s difficult to estimate. It won’t matter how much you make anyway. It will be gone in a flash!

1 cup butter
1 cup brown sugar

1 sleeve saltines
12 oz chocolate chips

  1. Preheat oven to 400.
  2. Line cookie sheet with parchment paper and then with saltines.
  3. Bring butter and brown sugar to a rolling boil, stirring frequently.
  4. Pour over saltines
  5. Bake 7 minutes.
  6. Sprinkle with chocolate chips so the melt, and then spread over pan.
