This is one of those Christmas cookie recipes where I reserve the right to stray from my healthy and light cooking theme. Pat’s Christmas Bark is just too easy and delicious not to share with you.

Pat’s Christmas Bark
I can’t say where Pat found the original recipe, but I’m sure glad she did! The bark turns out like an Almond Roca, and it’s absolutely addicting! Four simple ingredients, and one of them is a cheap box of saltines!
I don’t know how many the recipe serves, and Pat didn’t say. You break it up into pieces, so it’s difficult to estimate. It won’t matter how much you make anyway. It will be gone in a flash!

Pat’s Simple and Simply Delicious Christmas Bark
1 cup butter
1 cup brown sugar
1 sleeve saltines
12 oz chocolate chips
- Preheat oven to 400.
- Line cookie sheet with parchment paper and then with saltines.
- Bring butter and brown sugar to a rolling boil, stirring frequently.
- Pour over saltines
- Bake 7 minutes.
- Sprinkle with chocolate chips so the melt, and then spread over pan.

Crazy, huh? You would never know they’re there. The caramel floats the crackers to the top in the oven, then you spread the chocolate over the crackers. It really was a fun recipe. 🙂

Thanks for the recipe! Wouldn’t have thought to use saltines. Made this for treats this year with graham crackers and at the end sprinkled chopped pecans on top of the melted chocolate. Everything else was the same as your. YUMMY!!!

I made this too. But I used buttery club crackers. I think I like it better with the saltines though.
Little Apple Cook made it with graham crackers. Sounds like there are many versions of this recipe out there. Either way, it sure is easy and people love it.
