It’s time for another giveaway! After all, we’re not done with holiday gift giving just yet.
Over the holidays Old Factory sent me a box of their natural soy candles, and since I chose a box of their coffee shop scents, they seemed a perfect fit for these morning peanut butter and banana breakfast cookies.
Typically, I wouldn’t conduct a giveaway for non-food related products, but I’m such a fan of soy candles, I couldn’t resist trying these for myself.
I prefer soy candles as opposed to paraffin. They burn cleaner, and are made naturally from soy beans – a renewable energy source. You can read more about it on Livestrong.
I have to say, lighting their chai tea candle while I put together the ingredients for these peanut butter and banana breakfast cookies was really a calming experience. Most often I whip through the kitchen like a person possessed so I can get on to my next chore!
This month is all about super slender meals in our home, and this breakfast is definitely slender.
I used over ripe bananas and a hint of honey to add sweetness to 100% chunky peanut butter (no crummy, sugar packed peanut butter allowed!) and oats. A few eggs add a boost of protein to the mix.
With just a handful of ingredients, we had warm breakfast cookies on the table to enjoy with our coffee candle in just a few minutes.
Creates a nice atmosphere, doesn’t it?

A hearty, low calorie breakfast cookie packed with peanut butter and sweetened with bananas and honey. The cookies are best served warm right from the oven, or reheated in the microwave.

- 2 medium banana, ripe and well mashed
- 1 cup 100% peanut butter, chunky variety
- 1 1/2 tablespoons honey
- 2 cups oats
- 1/2 cup water, boiled
- 1 large egg
- 1 large egg whites
- Preheat the oven to 350 degrees.
- Line a cookie sheet with foil and spray with cooking spray.
- Combine banana, peanut butter, oats and boiling water and beat until well blended.
- Add eggs and mix in well.
- Scoop onto a cookie sheet with an ice cream scoop. I used a scoop, then leveled it off.
- Bake for 20 - 25 minutes.
- These cookies will very lightly brown, but won't get well browned as they don't have a lot of sugar in the mix.
