Aspen Snowflake Cookies

Crazy! That’s what I thought my friend, Carol, was when she told me she was baking cookies after work and the main ingredient was potato chips.

I was the one that was crazy for doubting her baking skills. These were the easiest, cheapest cookies I’ve ever made, and they are fabulous! They taste a bit like shortbread, probably because of all the fat. :)

Carol’s advice is to buy the cheapest potato chips you can find, and she says they freeze very well. Perfect for the holiday season.

I found this recipe on linkchaos, but when I called Carol to see how I was doing with my cookie making, she said her recipe was pretty close to the same.

Ingredients

1    cup    butter
1/2    cup    sugar
1/2    tsp    vanilla
2 1/2    cup    flour
3/4    cup    crushed potato chips

How to cook :

Cream together butter, sugar and vanilla.
Mix flour and potato chips, and add to creamed mixture.
Drop by teaspoonfuls onto cookie sheet.
Bake 10 minutes at 350F.
Sprinkle with powdered sugar.
