Crazy! That’s what I thought my friend, Carol, was when she told me she was baking cookies after work and the main ingredient was potato chips.
I was the one that was crazy for doubting her baking skills. These were the easiest, cheapest cookies I’ve ever made, and they are fabulous! They taste a bit like shortbread, probably because of all the fat. 🙂
Carol’s advice is to buy the cheapest potato chips you can find, and she says they freeze very well. Perfect for the holiday season.

I found this recipe on linkchaos, but when I called Carol to see how I was doing with my cookie making, she said her recipe was pretty close to the same.
Pretty Aspen Snowflake Potato Chip Cookies
Ingredients
1 cup butter
1/2 cup sugar
1/2 tsp vanilla
2 1/2 cup flour
3/4 cup crushed potato chips
How to cook :
Cream together butter, sugar and vanilla.
Mix flour and potato chips, and add to creamed mixture.
Drop by teaspoonfuls onto cookie sheet.
Bake 10 minutes at 350F.
Sprinkle with powdered sugar.

I had a recipe that I tore out of a newspaper many years ago for Potato Chip cookies, I think from the Washington Post. I never got around to making them, and the recipe has long since vanished. I can’t imagine a better recipe to make with the kids. It’s back on the to-do list now. Thanks!

Interesting. I never heard of potato chip cookies. Now I want to try out the recipe so that I can taste them. Did you use salted or unsalted chips?
I thought the same thing, so I just had to try them. Carol said to use the cheapest chips you can find, so I used salted. 🙂

I agree. Problem is I LOVE potato chips. I just dumped the rest of the bag in the garbage. Good thing they were cheap! The cookies really are good even today. They taste like shortbread. Happy holidays!
