What a great start for my cooking challenge of the month!
Locally grown tomatoes, fresh basil from the garden, and creamy mozzarella cheese are layered and served with a light dribble olive oil make an easy appetizer.
Such a fantastically simple dish, yet my son ate half the platter! That’s a sure sign that a meal is a success.
For those of us watching calories, I can make a meal out of this salad. Just add a whole grain roll and you’re set for dinner.
- 4 medium tomatoes, sliced into 4 slices each tomato
- 16 ea fresh basil leaves
- ¼ pound fresh mozzarella
- 2 tablespoons olive oil
- Top a tomato slice with one piece of basil and one piece of mozzarella. When you've assembled the platter, drizzle with olive oil and salt and pepper to taste.
