- ¾ pound broccoli spears
- 2 tsp olive oil
- 1 clove garlic, minced
- 2 tablespoons onion, grated rind and juice
- Clean and peel broccoli spears. Peel stems to help cooking time and reduce toughness.
- Toss spears with remaining ingredients and roast in non-stick cooking pan at 400 for 20 - 30 minutes until crisp-tender.
