Yahoo! It’s football season! My son, Jason, has been a player and coach for the past 17 years, so football is big in our house. Football season means boxed pizza and beer. Last night it was the Seattle Seahawks and Totinos pizza. I agree. Not a nutritious choice for a healthy eating blog, but it was worth every bite.
So, what does football and boxed pizza have to do with a turkey recipe? Not much, just that overall I’m working on eating fewer processed foods in general (excluding football night), and decided that I would start making my own lunch meats. Turkey seemed like a good start.
So easy to roast in the oven, I think it’s a healthier choice than ham or beef. It definitely tastes better, and costs less in the long run, than a few slices of packaged turkey.

Turkey Breast Rubbed with Herbs
Servings: 16
Ingredients

Roasted Turkey Breast
4 pounds turkey breast with bone (I used Jennie O)
3 tablespoons fresh parsley, chopped
3 tablespoons fresh rosemary, minced
3 tablespoons fresh thyme
4 tablespoons olive oil
1. Mince herbs and combine with olive oil.
2. Rub herbs under the skin of the turkey breast, then over the skin.
3. Roast approximately 60 minutes until temperature reaches 175 degrees.
4. Let rest and continue to carryover cook (foods will still cook after being removed from the heat source) for another 10 minutes before slicing.

Great idea on making your own lunch meat – you know exactly what’s in it that way. And good luck with the footy season.
It’s so easy too. Our local grocery often marks meats down when they get close to the pull date, but they are still just fine as long as you freeze them right way, or cook them right away. It makes it even cheaper to have good food.
