My turn to make something POM . . .
Yesterday Kieran shared her recipe for Flourless Almond Orange Cake with POM Pomegranate Juice, and today is my turn to post this simple shrimp salad.
I don’t often buy pomegranates and was surprised by their price tag, but one pomegranate produced plenty of seeds for this simple salad and a tart you’ll see later in the week, so the expense was worth it.
This sweet pomegranate salad dressing worked perfectly with my tangy blue cheese and shrimp. Fresh basil added a slight licorice taste, and the pomegranate seeds made for a lovely presentation.
I have plenty of salad dressing left. Hmmmm. Sounds like a great chicken marinade, doesn’t it?
- Dressing Makings
- 8 ounces POM Pomagranate Juice
- 4 tablespoons canola oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons light mayonnaise
- Whisk together ingredients.
- Salad Makings
- Serves 4
- 8 ounces shrimp , medium cooked with tails on
- 4 cups baby spinach
- 4 cups baby arugula
- ½ cup basil, chopped
- 1 cup pomegranate seeds
- 4 tablespoons blue cheese , crumbled
- 4 tablespoons almonds, slivered and toasted
- 1. Thread shrimp on skewers and drizzle with POM dressing.
- 2. Toss spinach, arugula, basil and pomegranate seeds in a large bowl and toss with POM dressing to taste.
- 3. Top salad with shrimp skewers, blue cheese and almonds.
What’s good for me in this dish?
Spinach is another powerhouse of nutrition. Spinach contains iron for energy, and vitamins C and A, folic acid and B6 to help your heart. Spinach has 13 different flavonoid compounds that function as antioxidants, and as anti-cancer agents.
Pomegranate is high in potassium and antioxidants. Potassium helps regulate water balance and muscle function. This is very helpful for people with high blood pressure and heart disease. The antioxidants help with blood oxidation and blood lipids. It is also thought to help prevent prostate cancer.
