Stir Fried Shrimp in a Spicy Coconut Sauce – and Don’t Forget the Kale!

If I hadn’t seen it with my own eyes, I would never have believed it.

An appetizer from a local restaurant consisting of kale in a spicy coconut sauce, had my husband raving about the wonders of kale. You would have thought I’d never served it before.

But I must admit, I was just as impressed with the restaurant’s presentation of an otherwise, plain green vegetable. Between the two of us, we had fork wars over the last piece of kale.

Any dish that can have my husband eating kale has to be recreated in my kitchen, but I would do that fancy restaurant one better . . .

My spicy kale recipe would have shrimp in the dish!

Fortunately it wasn’t hard to replicate that garlicky coconut flavor we couldn’t forget. All it took was a can of light coconut milk and a splash of chili garlic sauce.

And I’ll make a bet that my kale had far fewer calories than the restaurant’s version, even with the shrimp. After all, we know how restaurant’s love to load on the fat and salt.

Stir Fried Shrimp and Kale in a Spicy Garlic Coconut Sauce

Prep Time: 10 minutes

Cook Time: 20 minutes

Serving Size: 2 large servings

Ingredients

  • ½ pound shrimp, medium peeled and deveined
  • 8 cups kale, chopped
  • 1 ½ tablespoons coconut oil
  • 1 cup lite coconut milk
  • 1 teaspoon chili garlic sauce
  • ¼ cup green onion, thinly sliced
  • 2 tablespoons almonds, slivered

Instructions

  1. Preheat a wok or large non-stick skillet over medium heat and add coconut oil.
  2. Add kale and cook for 5 minutes to soften. Remove from pan.
  3. Add coconut milk and chili garlic sauce. Cook for 5 - 8 minutes to reduce sauce by a third.
  4. Add shrimp and cook for 3 - 4 minutes until shrimp slightly curls and is no longer raw. Don't overcook your shrimp, or it will be tough.
  5. Add kale and green onions to the pan and heat through.
  6. Serve topped with slivered almonds.

I love the addition of almond slivers! When looking at the first pictures I actually thought that WAS the restaurant dish! Maybe you should open a restaurant. I think you’ve got the skill!

What a gorgeous, delicious dish!!! My hubby has shocked me by eating and liking a squash soup when were at a dinner party…but I know he wouldn’t have touched it if I had made it :) Now whether I can get away with kale or not is another question…but it’s worth a try!

That richly colored healthy kale with the light shrimp does make for a great pairing. Also, the coconut garlic sauce is very unique and no doubt a delicious way to tie those two elements together. Well done!

Although I don’t care for shrimp, the rest of this dish sounds amazing! I have been on such a kale kick lately, and I’ve even gotten my husband eating it too :-) . I’d love to try making this without the shrimp, or maybe even with scallops. Yum!

I love kale! Or any dark green, for that matter. Nice combo of flavors – I love the spiciness of the chili garlic sauce. And adding shrimp is nice – you have an entire meal right there. Thanks for this.
