I have a shelf full of flavored vinegars. I kid you not- they take up an entire shelf. Raspberry, balsamic, pomegranate, champagne. You name it, I have it.
Why do I have such a large collection? Because they give me a variety of options when I want to make a simple vinaigrette or flavorful marinade. I’m not big on store purchased salad dressings these days. Most of them contain too many ingredients I can’t pronounce, and loads of unnecessary sugar.
My favorite vinegar is tarragon. I love the mellow, licorice flavor it lends to my salads, and it worked well with the English cucumber I had in the frig.
The combination of fresh cucumber, sweet and spicy shallot, grape seed oil, and my lovely tarragon vinegar really made a simple side salad we served with breaded cod.
- 1 large English cucumber, peeled and sllced in 1/2" chunks
- 1 large shallot, thinly sliced
- 1 tsp grape seed oil
- 2 tablespoons French tarragon wine vinegar
- 1 pinch salt
- 1 pinch pepper
- Toss ingredients together in a bowl and allow to marinate for 20 minutes.
