I won’t bust my calorie budget on Cinco de Mayo with these slenderized Mexican recipes.
Mike and I are big Mexican food lovers, so I’ve learned to skinny up tacos, nachos, bean soups, salsas, etc., otherwise I’d be running laps on the treadmill for days to work off the extra calories.
If you’re celebrating Cinco de Mayo, and authentic Mexican cuisine isn’t a priority for your celebration, then this menu will be perfect for your crowd.
We’ll start the party with these Mexican bean and salsa wonton appetizers with a dollop of mashed avocado and sour cream.
