My girlfriend’s daughter turned us on to this crowd pleasing dish, and after a quick Google search I found the perfect recipe over at SparkPeople.
If you aren’t familiar with SparkPeople, it’s a weight management website with loads of resources, including a vast database of user submitted recipes.
I have no idea who Addie Koch is, but she’s a low-calorie cooking genius. Her version of this popular slow cooker recipe weighs in at less than 200 calories and serves 6 – 8 people.
With just five simple ingredients – a bag of chicken breasts or tenders, a block of 1/3 fat cream cheese, a can of black beans, frozen corn and a can of Rotel diced tomatoes, you’ll have dinner for a crowd. Simply dump the chicken in the slow cooker, top it with the rest of your ingredients and set your slow cooker on the 6 – 8-hour setting. Head off to clean the house for company and by the time you’re ready, so is your chicken.
Naturally I had to add my own twist, so a squeeze of fresh lime and a few handfuls of fresh cilantro did a good job of brightening up the flavor.
I preferred a pile of brown rice in my bowl, but the rest of the crowd opted for tortillas and shredded cheese. Either way, this shredded chicken is a winner with kids and adults. Even better, it’s an affordable way to feed a crowd, and leftovers freeze beautifully, so be sure to make extra.
