Sweet, summer fresh cherries elevate a classic spinach salad into a salad to remember when you combine them with basil, blue cheese, and slivered almonds. (This post is sponsored by Crisp.)
When Crisp, a company promoting healthy cooking tools offered me an opportunity to test their cherry pitter, I knew a spinach salad would make an appearance on the dinner menu soon. Spinach salads served with any variety of fruits are family-pleasers, and summer cherries would be a delicious addition to the salad bowl.
When it comes to cherries, I prefer to eat them hand to mouth. After all, they don’t appear here in Seattle at an affordable price until the summer months and are available for just a few weeks at that. Preparing them for salads and desserts just isn’t worth the effort to pick out the pits.
Still, I’m open to new cooking adventures, so I gave this cherry pitter a try and I must say I wasn’t disappointed with how easy it was to use. You simply place your cherry into the top of the gadget and push the plunger down. Out pops the pit into a handy container. You can pit a pile of cherries in minutes.
A spinach salad needs more than just fruit and greens, and since summer is all about the freshest ingredients I can buy, basil tops my list to add punch to this salad. Fresh chives are readily available as well and don’t overpower those sweet cherries like green onions would (I often substitute the green ends of a green onion for chives) so they get a toss in the bowl as well.
With a crumble of tart blue cheese, sliced almonds, and a simple vinaigrette, this summer inspired spinach salad makes a light and refreshing side dish, or you could even turn it into a main dish with the addition of leftover chicken.

Spinach and Cherry Salad with Basil, Blue Cheese and Almonds

- 4 cups baby spinach
- 1 1/2 cups cherries, pitted and halved
- 1/2 cup chives, chopped
- 1/2 cup basil leaves, slivered
- 1 tablespoon almond oil
- 1 1/2 tablespoons champagne vinegar
- 1/2 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 4 tablespoons blue cheese , crumbled
- 2 tablespoons almonds, sliced
- Combine almond oil, vinegar, honey and Dijon in a bowl and whisk together.
- Combine spinach, cherries, chives, and basil in a large bowl and toss with vinaigrette.
- Divide into 4 bowls and sprinkle each bowl with cheese and almonds.
