When Sprout Living asked me to give their line of protein powders a try I would have been crazy to turn them down. I add protein powder to smoothies all the time to give them staying power until snack time rolls around.
I get up at the crack of dawn to work on this blog, then head off to may paying job. I need a meal with substantial protein or I’m starving by 9 am – far too early for a snack, much less lunch!
When Sprout Living sent me their samples I decided to repay their generosity with a pudding recipe. After all, I’m sure they’ve seen their share of smoothies.
After reviewing my options – Epic Original, Epic Protein:Chocolate Maca, Epic Protein: Green Kingdom and Epic Protein:Vanilla Lucuma, I chose the Vanilla Lucuma to add to my dairy free lemon pudding. I love lemon in anything, and the combination with vanilla is fantastic.

This lemony pudding really turned out well, especially with a little crunch of sliced almonds on top (though Mr. Mike still asked where the whipped cream was). I guess I’ll need to learn to make the coconut whipped cream I’ve been seeing on Pinterest to make us both happy!

Sprout Living Epic Protein Powder Vanilla Lucuma with Lemon Pudding

- 2 cups coconut milk, the unsweetened drinking brand you buy in the dairy aisle
- 3 large egg yolks, whipped
- 1 1/2 tablespoons cornstarch
- 2 scoop Epic Vanilla Lucuma Protein powder
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 2 packages stevia
- 1 pinch nutmeg
- 4 tablespoons sliced almonds
- Combine milk, egg yolks, cornstarch, Epic Vanilla Lucuma Protein powder, lemon zest, lemon juice, nutmeg and stevia in a medium sauce pan and whisk well to combine. Bring to a boil over medium heat stirring constantly. Reduce heat to medium low and continue to whisk until thickened and the pudding coats the back of a spoon.
- Allow to cool to room temperature, then pour into a glass bowl. Cover pudding directly on the liquid with plastic wrap to keep a skin from forming.
- Refrigerate for 2 hours or more.
- Sprinkle with almonds when serving.
