
Stone Fruit Salad
I had so much fun with my “Use Everything in the Pantry Challenge,” that I’ve decided I need another challenge just to keep the excitement going. Soooooo . . .
My doctor put me on a wheat free and dairy free diet for the next three weeks in an attempt to narrow down food allergies. Doesn’t that sound like a fun challenge?
It’s not such a bad time of year to have to cut out some of my favorite foods like French bread and yummy blue cheese. With all the fresh fruits and vegetables available, I should be able to eat pretty well these next three weeks (four to six if you count the time it takes to add foods back into your diet).

More Stone Fruit Salad
Tonight we had such an abundance of fruit in the house that I decided to make a simple fruit salad with honey and fresh mint. Don’t tell my doctor about the honey, it’s not on the list!
Serves 4
2 large apricots, halved and quartered
2 large plums, halved and quartered
1 large peach, pitted and cut into bite sized pieces
1 pint raspberries
1 tablespoon honey
1 tablespoon fresh mint, chopped
Combine fruits and drizzle honey over the top. Sprinkle with mint.

I love fruit salad. Mint is definitely a nice touch.
In Thailand where I grew up, we top sweet soft tofu with fruit salad. Really good and refreshing.
