I wanted to share with you one of my favorite meals to make on the grill.
Simply take your vegetable of choice and slice them into planks. I used sweet potato, zucchini and quartered red onion. Brush your veggies lightly with garlic oil and sprinkle with Martha Stewart’s Spice Rub. Grill until tender.
Then I rubbed the chicken breasts with the same spices and grilled them along with the veggies. Add some fresh chopped basil over the top and the flavor was fantastic! The chicken was moist and tender, and the veggies were sweet and spicy, thanks to Martha’s spice rub.
Take advantage of this time of year when grilling fresh veggies and fruits makes cooking so much easier. Cleanup is a breeze, and you can’t beat the nutrition boost from all those colorful fruits and vegetables.
