Actually, eating veggies isn’t a problem for me, I love them. However, I know a lot of people who push them around their plates, and don’t touch a bite. But I promise if you try this sweet roasted asparagus recipe , you’ll be eating your veggies too.
Maybe that’s because there hasn’t been much imagination taken in the preparation. In my opinion, roasting vegetables brings out the best in their flavors, especially when it comes to roasted asparagus.
If you have some asparagus in the frig, try roasting it with this sweet honey and garlic marinade. This same marinade would be terrific with broccoli and root vegetables too.

- 1 pound asparagus, trimmed
- 1 tablespoon garlic oil
- 1 tablespoon balsamic vinegar
- 1 tsp dijon mustard
- 1 tsp honey
- 2 tablespoons parmesan cheese
- salt and pepper to taste
- 1. Preheat oven to 450.
- 2. Combine oil, vinegar, mustard, and honey.
- 3. Toss asparagus spears with dressing and roast for 10 minutes until crisp-tender.
- 4. Toss with cheese.
What’s good for me in this dish?
Asparagus tops the charts in vitamin K and folate. It’s also a good source of vitamins C and A. Folate is essential for a healthy cardiovascular system. Asparagus also contains potassium, making it a natural diuretic.
