When I suggest you try something new, I’m not referring to sweet potatoes. I know it’s likely you’ve eaten a sweet potato before, probably at the Thanksgiving dinner table drowned in marshmallows – yuk! Forgive me if you’re a fan of that popular holiday side dish.
I mean that you should try a new recipe or cooking method. I’ve always wanted to try my hand at making a souffle, but I had heard such horror stories of collapsing masterpieces, that I was afraid to give it a try.
After a bit of encouragement from my cooking buddies, I decided to give souffle making my best shot, and boy did I have a good time!
Of course my souffle had to be semi-healthy, so I opted for this sweet potato souffle recipe from The New York Times. You can find the recipe on their website. They even provide nutrition information – gotta love that!
My souffle didn’t collapse into a puddle, so I was proud of myself for tackling a new skill. I’m sure a chef would find plenty of room for improvement, but I don’t care, I had a good time.
