If you read my blog, you know that I’m a big fan of fresh herbs, however, tonight it was pouring down rain, so I wasn’t in the mood to tromp out to the vegetable garden to get some thyme. I caved and used dried thyme.
Now I know why I use fresh herbs. The dried thyme added the flavor I was looking for, but it was missing that “fresh” taste.

- 2 cups carrots, whole baby
- 1 teaspoon fresh thyme
- 1 clove garlic, minced
- 1 teaspoon olive oil
- Steam vegetables with garlic and thyme until just tender. Approximately 20 minutes.
- Toss with olive oil and serve.
