Looking for a quick appetizer?
There’s nothing like having a recipe fail to make you think quick on your feet. The appetizer I planned for a recent dinner party flopped like no other. It was supposed to be a rice salad wrapped in lettuce cups, but I had a few issues with the rice.
As usual, I tried to pack too much into the day. As I ran to the store for additional ingredients, I left the husband keeping a watchful eye on the rice cooking on the stove. The husband did a great job watching the rice, but the wife added too much water. Result? Mushy and yucky rice.
How’s that for a culinary description of a flop?

- chopped apples - 4 medium
- dried cranberries - 1/2 cup
- toasted slivered almonds - 1/2 cup
- chives - 1/2 cup
- feta cheese - 1 small container
- light balsamic vinaigrette - 6 tablespoons
- radicchio lettuce leaves
- Toss salad ingredients together. Spoon salad into a lettuce leave and fold over to eat.
