It’s snowing! It’s snowing!
Yes, here in Snohomish, Washington it’s snowing. I realize that for many of you, the snow has been around for awhile, and the fact that it’s snowing in Seattle, isn’t all that exciting. However, for me, the snow puts me in a tail spin.
If you know me at all, then you know I hate the snow! I am one of those drivers you don’t want to see out on the road if there’s even an inch of the fluffy stuff lingering on the ground. For those of you that find cruising frozen roads exhilarating, I’m that person you complain about. I inch along at a snails pace, petrified that I’m going to go sliding off into oblivion.
So to save us all some grief, I’m going to stay in today and make some vegetable beef soup. In fact, I think I’ll recreate this hearty soup with chunks of tender beef, kale and mushrooms that I made for Travelin’ Local a few months ago.
