What Makes a Good Meatball? Turkey Meatballs with Dijon Sauce

by Kristi Rimkus on May 21, 2012

Turkey Meatballs with Dijon Sauce

I truly believe there isn’t one person on this earth that doesn’t like a meatball of some kind, including my vegetarian friends. I suppose that technically a Veggie Ball isn’t a “meat” ball – but it’s still the same idea.

We love our favorite ingredients rolled into large or small spheres and served with a sweet or savory sauce.

Personally? It doesn’t matter to me whether my meatball recipe includes ground beef, ground chicken, lentils, or in this case – ground turkey. I like them all.

Turkey Meatballs with Dijon Sauce

Add a savory sauce that picks up those crusty pan drippings to your meatballs and you’ll have created not only a good meatball, but a great meatball. (Sorry – still working on my food styling efforts, the sauce is in the bottom of the bowl.)

Happy, healthy cooking!

Turkey Meatballs with Dijon Sauce

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients

  • 1 ¼ pounds ground turkey breast
  • ½ cup panko bread crumbs
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 2 cloves garlic, minced
  • 2 large egg white
  • ¼ cup low fat plain yogurt
  • ¾ cup low fat chicken broth
  • 1 teaspoon Dijon mustard
  • ½ teaspoon fresh thyme

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine ingredients in a bowl, except broth, Dijon mustard and reserving 1/2 teaspoon of thyme.
  3. Using 1/4 cup measure form turkey into balls.
  4. Heat a large non-stick skillet over medium heat and spray with cooking spray. Add meatballs and brown on all sides - approximately 8 - 10 minutes.
  5. Remove pan to the oven and bake for another 10 minutes until meatballs are no longer pink in the center.
  6. Remove the meatballs from the pan. Place pan back on the stove over medium high heat and add broth, Dijon mustard and thyme. Bring to a boil, reduce heat to medium and simmer, scraping the bits stuck to the pan from the turkey meatballs into the sauce. Reduce by half for 5 - 6 minutes and add back meatballs.
  7. Toss meatballs in sauce and serve.

That food styling stuff is hard, isn’t it? It drives me crazy. I keep threatening to fire my food stylist, but since that’s me, I guess I can’t! Anyway, I agree on meat balls! They tend to pack lots of flavor and are fun to eat. Dijon mustard in almost anything is wonderful. I like this a lot – thanks.

Ha! I could fire myself too, but I keep trying, so I have to cut myself some slack. I hope you have a good week. :)

I love turkey meatballs but they are usually dry and tough. Looks like you’ve found the perfect solution. Great recipe!

I know what you mean. The leaner the meat, the drier the meatballs in my experience. Sauce always helps. :)

How funny, I’m making a VERY similar recipe to this on Wednesday (but yours sounds better…darn it, I already bought the other ingredients!). I love the addition of the dijon.

I may be the only one but I am picky about meatballs – I’ve had my share of tasteless ones, rubber ones and ones hard as golf balls…. yours look and sounds wonderful and I like your pic too…
I find butter peas in the frozen food section and I have seen them canned too, but canned always are a little too soft for my liking, don’t think you have enough cook time for them to absorb flavor before they turn to mush… have a great week…

Thanks Drick. I’ll check out the frozen food section. I’m no a fan of canned beans either. They often have too much sodium for my taste. Have a wonderful weekend!

They’re perfect for big gatherings, aren’t they? You can dress them up with almost any kind of sauce and people devour them. Have a good weekend!

These look sooooo good. I love turkey…why haven’t I ever made turkey meatballs?? YUM! I’d have to swipe the panko bread crumbs for gluten-free, but that’s a tiny change for something sooo delicious looking :) Thanks for sharing the recipe.

Hi Emily – my daughter-in-law is a gluten free girl too. If you make them, you’ll have to let me know how these work out for you. :)
