Watermelon Salad with Garbanzo Beans and Feta Cheese

One of the best ways to eat healthy is to keep your eyes peeled for recipes that stretch your comfort zone.

Watermelon and Feta Salad

Typically, you won’t see me eating fruit unless it’s berries, apricots or cantaloupe. But these days, I’m trying to change my ways and stretch my comfort zone with fruit packed recipes.

Watermelon and Feta Salad

I’ve seen more than one watermelon salad recipe that intrigued me, and after thinking about it awhile, I decided to whip up my own.

Watermelon and Feta Salad

This fruit salad couldn’t be any easier to prepare. Watermelon, garbanzo beans, spicy red onion, walnuts and feta cheese. Simple ingredients with big impact.

Toss your creation with an easy Dijon mustard vinaigrette to balance out that sweet watermelon, and you have a new twist on the same old fruit salad – a salad this non-fruit lover will eat.

Watermelon and Feta Salad

Ingredients

  • 4 cups watermelon
  • ¾ cup garbanzo beans
  • ¾ cup red onion, thinly sliced
  • ½ cup walnut pieces, toasted
  • 2 tablespoons champagne vinegar
  • 1 tablespoon walnut oil
  • ½ teaspoon Dijon mustard
  • ½ cup low fat feta cheese, crumbled

Instructions

  1. Combine champagne vinegar, walnut oil and Dijon mustard in a small bowl.
  2. In a larger bowl gently toss remaining ingredients and then gently mix in dressing.
  3. Chill for 15 minutes.

    Woo hoo! I picked up a gorgeous watermelon this week and have just been staring at it. Maybe its meant to be saladized :) Love me some feta!

    Looks like a very healthy and delicious salad - the mix of fruit, beans and feta cheese with a tangy vinaigrette sounds very tempting!

    Nice combo! I've never tried watermelon with feta - it should be wonderful. Watermelon and goat cheese can be a pretty nice combo. Super recipe - thanks.

    I made a watermelon feta salad this summer too with a drizzle of balsamic and surprisingly loved it as well :)

    I will have to try that one. I had one similar this summer, but it didn't have the walnuts in it. I love walnuts and I'm sure it's a wonderful addition. :)

    Way to stretch outside your comfort zone. That's how I felt about the raw corn salad! I love it when trying something new results in new favorite foods.

      I know what you mean. We live in farm country and the first time I served my husband a black bean and fresh corn salsa he was at first skeptical, but then ate the whole bowl!

      This recipe stretched my comfort zone for sure, but the husband ate an entire bowl. Probably because of the watermelon and not the garbanzo beans. :)

    That's a great mix of savory ingredients to contrast the watermelon. I tend to eat my watermelon straight with a bit of salt but I'm definitely intrigued by the chickpeas and feta accent.
