Okay, so we all know that the typical Caesar Salad is loaded with fat and calories.
Most of the low-cal recipes I’ve tried fall flat in flavor. This Weight Watchers recipes is different. It’s really creamy, garlicky and still light in calories. I might have added a few more tablespoons of ricotta to thicken it up a bit more, and maybe some fresh lemon juice, but overall for a low calorie Caesar salad recipe?

- Weight Watchers Caesar Salad
- Serves 4
- ½ cup lowfat buttermilk
- 2 tbsp part skim ricotta cheese
- 2 tbsp parmesan cheese , grated
- 2 ea anchovy fillets, mashed
- 1 clove garlic, crushed
- ¼ tsp pepper
- 4 cups lettuce
- 6 ea cherry tomatoes
- 1. Combine dressing ingredients and chill.
- 2. Toss lettuce and tomatoes with dressing.
