I love this healthy pancake recipe from Gina’s Weight Watchers Recipes!
Pancakes aren’t something I would usually indulge in, but these pancakes were low in Weight Watchers Points and calories, so I decided to give them a try.
Naturally, I had to add my own twist to the recipe. I used low fat buttermilk instead of 1% milk, and added 2 tablespoons of flax seed meal. They came out light and fluffy. Worth the points.
You could reduce the Weight Watcher points and calories, by using fat free or 1% milk and omitting the flax seed, but I think they are a great addition to my healthy eating plan.
- 1 cup whole wheat flour
- 2 tablespoons flax seed meal
- ¼ tsp salt
- 1 cup low fat buttermilk
- 3 large egg whites
- 2 tsp oil
- 1 tablespoon honey
- ¼ tsp cinnamon
- 1 tsp vanilla
- Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix until there are no more dry spots.
- Heat a large skillet on medium heat. Spray oil to lightly coat and pour 1/4 cup of pancake batter. When the pancake starts to bubble flip and cook til golden brown on the other side.
