Okay, this is a crazy tip, but I’ll post it anyway.
There is a product called “Wondra.” It’s a very fine flour. Maybe you’ve already heard of it. Tonight it worked wonders for me (ha!).
The pan sauce I made for the Pork Marsala recipe I posted earlier this evening was a bit on the thin side, so I sprinkled Wonder into it (about 1 tbs) and stirred. Waiting for lumps to form, I was pleasantly surprised when my pan sauce became the exact consistency I needed.
Wondra – good stuff!
