This salad makes a delicious light summer meal. You could add leftover chicken and add a crusty whole-grain roll to make a heartier meal. Yet another recipe that I’ve had for years, so I can’t provide the originator.
Caesar Salad with Tortellini – Serves 4
Ingredients
3 tbsp Fresh Lemon Juice
1 ½ tbsp Olive Oil
1 tsp Anchovy Paste
1 clove Garlic — minced
9 oz Cheese Tortelini — Cooked and drained
2 tbsp Water
1 ½ cup Asparagus — sliced and steamed
12 cup Romaine — torn
¼ cup Parmesan Cheese — grated
Instructions
Combine first six ingredients. Combine tortellini and asparagus and toss with 2 tbs lemon juice to coat. Toss lettuce with remaining dressing then add tortellini mixture. Serve with grated parmesan cheese.
