
Melon and Berries Power Breakfast
I’m a big believer in eating breakfast, and I love this breakfast because it gives me a good boost for the day.
The yogurt came from my yogurt maker, so it’s free of additives or preservatives. It’s so fresh and creamy. Add some sweet fruit and crunchy walnuts, who wouldn’t want that for breakfast!
Serves 1
½ cup cantaloupe, cut into bite sized pieces
½ cup strawberries, quartered
¼ cup blueberries
½ cup low fat yogurt
1 tablespoon walnuts, chopped
Combine melon, strawberries and blueberries. Top with yogurt and walnuts.
What’s good for me in this dish?
Cantaloupe is high in vitamin A, necessary for eye and lung health. It’s also a great source of vitamin C, a powerful anti-oxidant and support immune functions. Cantaloupe also containg potassium, B6, fiber, folate and niacin which support heart health and healthy blood pressure.
Strawberries are off the charts in vitamin C, a powerful anti-oxidant. They also contain manganese and fiber. Strawberries protect against macular degeneration and rheumatoid arthritis. Strawberries are a natural anti-inflammatory and cancer fighter, as well as supportive for good blood pressure.
