
Crunchy Broccoli and Apple Slaw
If you’re looking for a way to get the family to eat broccoli, this recipe is not only easy on the budget, but the apples and dried cranberries make a colorful, sweet salad.
The caraway seeds add a licorice taste to the dressing, but if you aren’t big into caraway, swap out celery or poppy seeds.
I wanted to keep the calories down for the day, but the next time I make this I’ll add sunflower seeds. Don’t you think they’d be a nice crunchy addition?
Just an FYI, Kraft makes an olive oil based mayonnaise that’s relatively low in calories and fat. Give it a try the next time you’re replenishing the pantry. I don’t often use mayonnaise, but I don’t feel bad about adding this brand to dressings, sandwiches and salads.

Serves 8
12 ounces broccoli slaw
1 cup broccoli florets, cut into small pieces
1 cup dried cranberries
¼ medium red onion, finely chopped
2 medium apple , chopped
½ medium lemon, juiced
1 ½ tablespoons caraway seeds
2 tablespoons apple cider
6 tablespoons low fat mayonnaise
2 tsp sugar
salt and pepper to taste
Mix dressing mayonnaise, sugar, vinegar and caraway seeds in a bowl.
Combine remaining ingredients with dressing and let sit for one hour. This step is important as it softens the broccoli slaw.
You can use the same recipe with cabbage.
What’s good for me in this dish?
Broccoli is a cruciferous vegetable and a powerhouse of nutrition. Vitakins C, K, A, folate, fiber, manganese, tryptophan and potassium. Fights bladder, ovarian and prostate cancer. Good for detoxification and stomach health, as well as cardiac and vision health. Wow!
Apples are a great source of vitamin C and fiber. Vitamin C is an important antioxidant for a healthy heart. The flavonoids in appleas also contribute to heart health. High in fiber, apples can help lower LDL cholesterol.

This salad looks delicious! I’m a full fat Hellman’s Mayo kinda girl but since there’s only 2 T. of it I shant worry. What, may I ask, would you serve this with? I’m just drawing a blank at the moment. Feel free to e-mail. Oh, and I do think the addition of sunflower seeds or maybe toasted slivered almonds would really make this recipe soar!
