Garlicky Spinach and Mushroom Pizza

Do you think you can’t have pizza when you’re trying to lose weight? Sure you can! Just make your own. It’s so easy, and you control the fat and calories.

Just pick up pizza dough at your local pizza joint, or grocery store, add all the filling veggies you like. Top it with low fat mozzarella and you’ll have a terrific, figure-friendly pizza.

Serves 8

1 pre-made pizza dough
2 cups baby spinach
4 cups mushroom , sliced
3 cloves garlic, minced
2 tablespoons olive oil
½ cup basil, chopped
1 cup tomato sauce
¼ cup Parmesan cheese , shredded
1 cup low fat mozzarella cheese

  1. Preheat oven to 425.
  2. Heat non-stick skillet over medium heat with 1 tbs olive oil. Saute mushrooms and garlic 5 minutes until nicely browned and tender.
  3. Brush pizza dough with 1 tbs olive oil (this keeps the sauce from soaking into the dough), the spread tomato sauce over dough. Top with spinach and mushrooms.
  4. Sprinkle with basil and then top with mozzarella.
  5. Bake in oven for 15 – 20 minutes depending on the thickness of your dough. Five minutes before pizza is done, sprinkle with Parmesan cheese.

What’s good for me in this dish?

Mushroom are super high in selenium, vitamin B2, copper, Vitamin B3, tryptophan, potassium, phosphorus and zinc. Mushrooms contain powerful phytonutrients that contribute to overall health, as well as protecting against certain cancers such as breast cancer. Selenium contributes to the proper function of our antioxidant system. Zinc promotes immune function. There is a list a mile long of the benefits of mushrooms. They should be an addition to any healthy eating plan.

Spinach is another powerhouse of nutrition. You’ll get an energy boost from the iron in the spinach, not to mention Vitamins C and A folic acid and B6 to help your heart. Spinach is has 13 different flavonoid compounds that function as antioxidants and as anti-cancer agents.
