
Sweet Campari Tomatoes with Basil and Salty Parmesan Cheese
Don’t you just love making up your own recipes? I enjoy trying out recipes I find in magazines and on my favorite blogs, but there’s nothing more fun than creating a dish on the fly and having it turn out great.
Costco had Campari tomatoes that were the perfect size for stuffing, and what goes better with tomatoes than cheese and basil! Probably lots of things, but this combination is my favorite.
I used these as a side dish for our stuffed flank steak, but they would just as easily make a great appetizer.

Serves 4
8 small tomatoes
½ cup low fat mozzarella cheese, shredded
¼ cups parmesan cheese , shredded
¼ cup basil, chopped
½ cup croutons
Heat oven to 375. Slice top off of tomatoes and scoop out insides with melon baller. Crush croutons and mix with cheese and basil. Stuff tomatoes and bake for 10 minutes until cheese melts. Do not bake too long or tomatoes will lose their shape.
What’s good for me in this dish?
Tomatoes provide a great source of vitamins C, A and K. Not to mention the antioxidant and cancer preventing benefits of Lycopene. Tomatoes support colon and prostate health, as well as good source of potassium and a good source of niacin, vitamin B6, and folate to support a healthy heart.

campari tomatoes have become one of my favorites now that the other grocery store varieties taste similar to plastic or cardboard. This is a great way to utilize them and I’m sure that broiling them makes them even sweeter. Nice one!
