Sweet Hoisin Glazed Chicken Legs

Those were the days!

Off to another football game! My son has been playing and coaching football since he was in elementary school. Jason is now in graduate school at the University of Washington (not a proud mom at all!), and currently coaches for the Bothell Cougar football team in Bothell, Washington.

Bothell is a championship team, and we go watch them play at every opportunity. They pack the stands, so you if you want a seat, you’d better get there two hours before game time.

Fun for me! That means I get to pack dinner. We sit in the stands, eat our dinner and watch the kids warm up. Life at its best!

Serves 4

Ingredients

8 ea chicken legs
⅔ cups hoisin sauce
¼ cup pineapple juice
½ tablespoon ginger, minced
1 clove garlic, minced

  1. Hoisin Glazed Chicken

    Hoisin Glazed Chicken

    Preheat grill.

  2. Combine hoisin, pineapple juice, ginger, and garlic in a bowl.
  3. Grill chicken over medium low flame for 10 minutes turning as needed to keep from burning.
  4. Close grill lid and indirect grill (turn off flame over one side of the grill and move chicken to the side without flame) for another 20 minutes until legs are done. Meat should pull away from the bone.

What’s good for me in this dish?

Lean chicken breasts are a complete protein, with less saturated fat than beef. Chicken also has cancer protecting B vitamins, including Niacin and B6 for energy.
