Yes, this is a light and healthy recipe blog. However, I reserve the right to post a few recipes that have absolutely no nutritional value.
My daughter, Lauren, suggested we bake some cookies while we were waiting to leave for the family Thanksgiving celebration. Her idea was to use cake mix to make cookies. Great idea!
Google, as usual, came to the rescue. I found a recipe on ehow.com. You won’t believe this, but they were fantastic! Light and crispy chocolate, with a creamy cherry center. Crazy that they were so easy to make.
I can honestly say, I would make these again any time I need to make a quick treat. I can picture all kinds of cake mixes, and ways to mix it up. How about a spice mix with chopped walnuts? Or how about applesauce cake mix with raisins?
This is how easy it was to make these cookies:
1 box cake mix of choice
1/2 cup softened butter
1 egg
(If using chocolate mix add 2 tbs water)
Combine ingredients and bake at 350 for 8 minutes.
