Was this fun to make? You bet! When I saw this recipe on Roti n Rice, I just had to give it a try. The original recipe called for ground pork, but I didn’t have any, and wanted to save a few calories, so I made mine with shrimp and mushrooms.
I love food I can play with, so filling the wontons with shrimp and making little purses really made my day. Mine aren’t nearly as pretty as Ro-Ri’s, but you get the idea.
This soup was light and delicious. The shrimp and mushrooms were a good combination. Don’t omit the sesame oil, it really adds depth of flavor.
Happy cooking!
Soup:
2 qt chicken stock for soup, seasoned to taste
2 green onions, sliced
Filling:
8 oz shrimp, minced
1/2 cup mushrooms
2 green onions, finely sliced
1/4 cup shredded carrot
1 tsp sesame oil
½ tsp pepper
2 tbsp soy sauce
1/2 tsp ginger
1/2 clove garlic
1 packet thin wonton wraps
- Mix all filling ingredients in a bowl and let marinate for 30 minutes.
- Place a wonton wrapper on palm. Spoon 1 tsp filling into the center. Moisten wrapper around filling with your finger dipped in water. Gather the wrapper up around your filling and twist to seal. It will look like a purse with a drawstring.
- Makes about 40 wontons.
- Boil two quarts water in a large pan. Drop wontons into the pot. Reduce heat and simmer for about 3 minutes. Cooked wontons will float to the top. Remove wontons and drain.
- Heat chicken broth over medium heat in a pan to warm through.
- Place wontons into a bowl. Ladle some chicken broth onto wontons. Top with sliced green onions and a few drops of sesame oil.
What’s good for me in this dish?
Shrimp is low in fat, and higher in cholesterol; however, studies show that it can raise HDL and triglyceride levels. It has B12 for hearth health, omega-3 fatty acids for anti-inflammatory effects, and antioxidants selnium, copper and zinc.
Mushrooms are super high in selenium, vitamin B2, copper, Vitamin B3, tryptophan, potassium, phosphorus and zinc. Mushrooms contain powerful phytonutrients that contribute to overall health, as well as protecting against certain cancers such as breast cancer. Selenium contributes to the proper function of our antioxidant system. Zinc promotes immune function. There is a list a mile long of the benefits of mushrooms. They should be an addition to any healthy eating plan.
